It feels the same as when I feel that someone else is bullshitting.My mind thinks it can recognize “good” and “bad” arguing styles (presumably learned from lots of training data). I can skim through an essay and find points where it feels like it’s slipping into irrationality without necessarily paying attention to what all the words are saying.
As for how I notice—I just do. My mind brings it to my attention. I assume there are things I can do to train this ability or put myself in the right mood for it, but that’s not something I’ve explored.
